CUSTARD


Having been lactose intolerant for many years now, it has been a long time since I have been able to enjoy eating anything creamy, including custard. I recently came across this very easy custard recipe at www.primalandgreenoc.blogspot.com.au which is dairy free. I have also been trying to avoid eating anything with added sugar in it and this recipe also ticks this box for me as the bananas make it sweet enough without having to add any sweetener to it. Try it, you will love it!

Ingredients:
2 bananas
1
can coconut milk
3
eggs
cinnamon

Directions:
  • combine all ingredients, except cinnamon in food processor until combined
  • pour into custard or souffle cups (or mugs or oven safe dish)
  • sprinkle with cinnamon
  • put cups into dish with water (so it reaches about half way on the custard cups)
  • bake in oven at 180C for 45 minutes
  • chill (if you can wait that long)
  • devour
When I made these the first time I was craving lemon so I added the juice of half a lemon to the mixture and just left out the cinnamon. They were delicious. You could also add some carob or cacao powder if you wanted chocolate custard, or some vanilla essence for vanilla custard. Enjoy!
